Quiche

    A quiche is basically an omelet in a pie crust.  You can choose what vegetables, meats or anything else you would like to add to it.  I decided to add bacon and some cheese to my quiche. So to make the recipe, I needed to make both an egg mixture and a pie crust.  I started by making the crust first.
 
    I have made pie crust many times before, so I had no trouble making it.  I started off by mixing the flour and salt together.  I then measured my lard and cut it in with a pastry blender.  After the lard was cut to approximately pea size, I added water.  The recipe said to add 4-6 tablespoons of water, but I ended up adding more to get the dough moist enough.  I then broke my dough up into two equal balls.  I rolled each of them separately on a well floured pastry cloth until thin.  I placed one of the rolled out dough onto a pie pan and crimped it to look nice.  I covered this crust with plastic wrap and placed it into the fridge to bake the next day.  I saved the other pie crust to use for my soft pie.


   After I was done with my pie crust, I started to work on my egg mixture.  I cracked 6 eggs separately and added them to a bowl.  I mixed them very well with a Mexican whisk.  I then added a cup of milk and a little over a cup of cheese.  I also fried some bacon and added that as well.  I then  covered the bowl and put it in the fridge.

    I was gone the next day, but Mrs. Cummings volunteered to bake my quiche for me.  All she did was pour my egg mixture into my unbaked pie crust and put it into the oven at 350 degrees.  After 45-55 minutes she took my quiche out and let it cool.

    I thought my quiche looked very nice.  It had a yellow-orange color from the eggs and cheese, and you could see the bacon in it.  The pie crust was a perfect golden brown color.

    I thought my quiche tasted light and fluffy.  I personally didn't really like it because I am not a big fan of eggs.  So I let my dad and brother eat the rest of it.  They both really liked it!  My dad said the pie crust was nice and flaky.  He wanted me to make another one for him the next day!

    I will definitely be making this recipe again for my family.
