Potato Soup

For this lab, me and my partner had to find a recipe that mainly involved potatoes. We found a very basic recipe: Absolutely Ultimate Potato Soup. We started this lab on a Friday and had to wait till the next Monday to work on it.

On Friday, we started peeling our potatoes and also cutting them up. After they were cut up and put in a big bowl, we had to cut some stalks of celery, onion, and garlic. Since we had 8 potatoes to cut and peel, with the rest of the vegetables, it took most of the time we had so we decided not to cook that day. So we had to put the potatoes in the freezer so they wouldn't brown, but I forgot to add water, so they turned out a little brown! When a potato is brown, the taste doesn't change, it just doesn't look appealing.

On Monday, we had to get cooking. While my partner finished cutting, I had to cook some bacon so we could use bacon grease to cook the chopped celery, onion and garlic in. Once all the bacon was cooked, I set it aside and put all the chopped vegetables in it. When the vegetables cooked to a golden-brown, we put them in the bowl with potatoes. I then added some cut up bacon (which we didn't have to use) to the bowl. We then  put all of the vegetables, and bacon, and put them into a big saucepan. I then added 4 cups of chicken stock and mixed the whole soup till the potatoes were softer and the soup was thicker.

Overall, this recipe was time consuming but it was very tasty. I thought the potatoes were just right, they weren't to soft, they had a little crunch to them. Our soup was a little browner than what it was suppose to be because we didn't add water to the potatoes when we put them in the freezer over the weekend. Putting potatoes in water to prevent them from browning is the biggest thing I learned from this lab.
