Chocolate Pudding Pie

This recipe was by the most challenging and difficult one, considering me and my partner BOTH messed up on our own pies. There were 3 separate recipes: The pie crust (already made), chocolate pudding, and the meringue. The pie crust I used for this recipes, has holes that I put in to stop air bubbles from occurring under the crust.

First thing we always got to do is preheat the oven, so we heated it to 350 degrees. Since the crust was already made, I had to make the chocolate pudding. First, I separated the yolks from the egg whites and put that in a separate bowl for the meringue. I then beat the yolks till they were one liquid and left them in the bowl for later.

In a saucepan, I mixed the cornstarch, sugar, salt and cocoa powder. I then added milk and mixed it together with the dry ingredients. Lastly, I put the pan over the stove on medium heat and whisked for a long time, making sure nothing was on the bottom and until mixture thickened.

Next I started making the meringue, which is kind of like cool whip. It is a mixture of egg whites, sugar, vanilla, and cream of tartar. I started off by mixing the egg whites in the mixer and waited till it was a foamy white. I then added the vanilla and cream of tartar till that was well mixed. I then scraped all the foam off of the bowl's sides and put it towards the middle of the bowl and added sugar. Once the sugar was well mixed, we had the meringue.

Once the pudding was all thickened, I took 1/4 cup of the pudding and added it to the yolks in the bowl. When they were mixed, I added it back to the saucepan with pudding and kept mixing so the bottom of pudding in the saucepan wouldn't burn. After the pudding was thickened, I removed the pan from the heat and added the vanilla and mixed.

Now that the pudding was done, I added it to the pie crust. Once the pudding was all evened out on the pie, I added the meringue to top it off. We then put our pies in for 10-12 minutes to cook, and once it was done I let it sit and came back later after practice to get it.

My pie was very good, I didn't like a lot of meringue so I took some off, but I ate each bite with a little on top. I liked the texture of the meringue, I just wasn't a fan of the taste. I wish my mom would make homemade chocolate pudding instead of the pudding cups that we get at the store. I will try to make this again in the future, but I will probably need a partner to help me.
