Black Bean and Corn Quesadilla

    For this recipe, I started by getting everything measured out and ready to go.

  
     I drained the cans of black beans and corn and set them aside.  I placed a skillet on the stove and heated some oil on it over medium heat.  I then chopped an onion and added 3 tablespoons of it to the skillet.  I cooked this until softened and added the beans and corn.  I stirred this up and added the brown sugar, salsa, and pepper flakes.  Once everything was mixed, I cooked it for about three more minutes.

    I then got out another skillet and melted 2 teaspoons of butter in it.  I placed a tortilla in the skillet and added some cheese and the bean mixture on top.  I put another tortilla on top.  Once it was browned on the bottom, I flipped it over to brown the other side.  I repeated this procedure to make my other quesadilla.

   I was kind of dreading this recipe at first because I didn't think I was going to like the beans in it, but I was pleasantly surprised.  I actually really enjoyed the quesadillas!  The tortillas were perfectly browned on both sides, and the cheese was nicely melted in the middle.  The beans and the corn worked very well together and made the dish taste great.  If I were to make this dish again, I might even add some chicken to make it taste even better!
