Chicken Cacciatore

First I preheated the skillet to 350 degrees. I took my chicken out of the fridge that I put in brine over night. I then took out flour, salt and pepper and coated my chicken with it. In our skillet Jared put about one inch of oil and let it heat up. Once heated we put our chicken covered in the coating. We flipped the chicken once golden brown, when both sides were golden brown we took it out.

We then cut up all the vegetables and measured out all our ingredients. I did the white wine, oregano, can of tomatoes, and the onion, while Jared did the pepper and the garlic clove. All these flavors into one dish made my mouth water! I also learned that using wine helps cook the chicken. 

We sauteed our peppers and onions first. I then added our chicken, garlic clove, and tomato. After this cooked for about a minute I then added the white wine. We let it cook for about 30 minutes, then we put it in a bowl and let it sit in the fridge over night. 

The next day we cooked our noodles. While the noodles were cooking we reheated our chicken up to 165 degrees. I am not a big fan of noodles so when we put it all on our plate I could really focus on the chicken. My first bite I really could taste the tomato and pepper. The chicken was very tender and full of flavor. I could not really taste the garlic in this dish. I was pleasantly surprised to find that I enjoyed it. I don't usually enjoy Italian food. I would make again for anyone!
