Black Raspberry Cobbler

    I had to alter this recipe a little to fit our resources.  I changed it by cooking the berries in a saucepan instead of a cast iron skillet.  I also baked the cobbler in a glass dish instead of a cast iron skillet.  I couldn't use the skillet because it would damage the flat-top stove.

    First, I preheated the oven to 400 degrees, then I started to making the dough.  I mixed together the flour, sugar, baking powder, and salt.  Once it was well blended, I cut in the butter.  I then boiled a 1/4 cup water and added it to the mixture.  I stirred until evenly moist.  I ended up using my hands to make sure everything was mixed.

    Next, I started to make the berry mixture.  I measure a 1/4 cold water and poured it into a saucepan.  I added the cornstarch and mixed until it was dissolved.  I then added the remaining sugar and 4 cups of black raspberries.  I put the saucepan on the stove and heated it to a boil.  Once it began to boil, I transferred it to the glass container.  I then dropped the dough evenly on top of the berries and placed the dish into the oven.  After about 25 minutes I took the dish out of the oven and let it cool.

    I thought my cobbler turned out very well.  The dough was perfectly golden brown on top and looked nice against the berries.  The dough tasted moist and had a nice texture.  The berries tasted good, they weren't sour at all.  They went well with the dough on top. 

    I brought this dish home to my family, and they all loved it.  I will probably be making this easy dish again sometime.
