Traditional White Bread
About a 40 minutes process. We preheated the oven to 425 degrees and baked it at 375 degrees for about 30 minutes until the top was a golden color The first thing we did was dissolve the yeast and sugar in the Kitchen aid with warm water. Once the yeast was active we used our paddle to mix it. We stirred in our 3 tbs of lard and 1 tbs of salt and 2 cups of flour. We stirred in the remainder of the flour 1/2 cup at a time. Once it was coming together we switched over to the dough hook so it could knead the dough.
My partner heated our oven to 170 and when it reached that temp he shut it off.She had a pot of water boiling. We oiled a big bowl and placed our dough into the bowl. We covered the bowl with a towel and put it in he oven along with the pot of water. This is called Poor Man's Proofer. Once it was ready to come out we floured our surface and deflated the dough. We dived them in 2 and and formed them into 2 loaves. We placed the loaves in two separate greased pans and covered them with a towel until the bread doubles.
