Double Chocolate Sandwich Cookies

20151217_113950.jpgI first preheated my oven to 350 degrees and lined my cookie sheets. Then I mixed together flour, cocoa powder, and salt in the kitchen aid until blended well. I then added powdered sugar and hazelnut extract and mixed until it was all blended. Then added egg and mixed that around for a while. Then I added flour to it and mixed it until it was all combined. After that I then added the chocolate chips.

After they cooled for a half hour I took them out and shaped them into 1 inch balls and placed onto a cookie sheet lined with parchment paper. After they were all on the sheet I pressed them down with the bottom of a glass to flatten them. I then baked them for 9 minutes and took them out of the oven after they were the proper look, and color. I let them cool on a cooling rack.

I thought this recipe was really easy. The cookies were perfectly cooked with a harder crust on the outside and a softer middle part of the cookie. The peanut butter and the chocolate complimented each other filling your mouth with sweetness. I will be making these again.
