traditional bread
We first dissolved the yeast in warm water. When it was ready after about five minutes and then we used the paddle on the Kitchenaid to mix it. My partner stirred in 2 cups of flour, 3 tbs of lard and 1 tbs of salt. We stirred in the rest of the flour 1/2 cup at a time. When it started to going together we used the dough hook to knead the dough. My partner then heated the oven to 170 and when it reached that temp we shut it off. We then boiled water and put it in there so the dough would rise this process is called the poor man's proofer. We covered the bowl and put it in the oven beside the pot of water. When it was ready to come out we floured our surface and punched in the dough. Then we made the dough into two loaves. After we placed the loaves in greased pans and covered them with a towel for the bread to rise again. It took about 40 minutes for the dough to get proofed again. Then we preheated the oven to 425 degrees and baked it at 375 degrees for about 25-30 minutes. It was a very good recipe.
