Vanilla meringue-Corissa Hite

The first thing I had to make was the crust for my pie. I preheated my oven to 350 while I added my ingredients together. In a bowl I put my 2 cups of flour and 1/4 tsp of salt and mixed them together. I then had to cut in the lard with the pastry blender. I blended it until they were pee sized. I used about 10 tbs of water to moisten the dough. Once it was ready to go I formed the dough into two balls. I used the one for my pie. I shaped my dough into a circle so I would be able to evenly roll it out. I spread out my cheese cloth and sprinkled some flour on it. I took my rolling pin and put a cover over it and then sprinkled flour on that as well. I rubbed in the flour on the cheese cloth so it would stay. My dough was ready to be rolled out. I rolled it out on the cheese cloth as evenly as I could. I folded my cloth over holding my dough into place. I set my crust into the pan and pressed it nicely into the pan. I cut off the excess dough I didn't need. I was then ready to press the dough nicely on the side of the pan. I then started to make my vanilla pudding. In a saucepan I put a cup of sugar, 1/4 cup of cornstarch and 1/4 tsp of salt. I stirred my dry ingredients up. Then I switched over to separating my egg whites from the yolks. I used two little glass bowls. I strained my egg whites. I switched over to my dry ingredients and added my 3 cups of milk slowly and stirred. I turned the stove on medium heat and stirred consistently. I burned my first batch so I had to start from scratch. I stayed where I was the next time and stirred most of the time. I had my egg whites being mixed in the kitchen aid on high. I added my sugar. Going back to the pudding, as it got thicker and thicker I slowly scooped out some of my mixture and poured it into my eggs and consistently stirred fast. Once I smoothly stirred my eggs I dumped them back into the mixture. I stirred my 3 tbs of butter and 1 1/2 tsp of vanilla. My pudding was ready to go into the crust. I poured my pudding into the pie crust. My meringue was fluffy and ready to be topped onto my pie. I evenly spread it on my pie and put it into the oven at 350 for 13 minutes. After cooling for 4-6 hours I had a slice. It was sweet and moist. I think I did an excellent job, I would definitely make this again.
