chicken cacciatore

First we made the batter and then breaded our chicken. Once breaded, we fried till it until was golden brown. Then removed the chicken from the pan since we already had our peppers and onions chopped we then sautéed the onions and peppers.After those were nice and cooked we then re-added the chicken, and our mix of spices, wine and tomatoes. Then let this simmer for around half hour, and it was finally done. The dish turned out pretty good, the texture of the chicken I thought was perfect. And the flavor of it was also very good.  However the vegetables I thought could've been cooked a little longer they were still kind of hard.  I think this is due to the wine, and tomato mixture we added towards the end. I don’t think ours had as much liquid as it should have in the last step. I would definitely recommend this dish to anyone.
