Chicken catachatori

In this dish the first thing we did was, brine our chicken. For this brine we used a sort of acidic butter milk brine to let our chicken soak. After the chicken soaked over night, we made a batter (which was mostly flour) and breaded our chicken. Once breaded, we fried till it was golden brown. We then removed the chicken from the pan, we then sautéed the onions and peppers, then re-added the chicken, and our mixture of wine, tomatoes, and spices. We then let this simmer for about a half hour, and it was finally done.

Overall, the dish turned out pretty well, the chickens flavor, and texture was perfect. However the vegies were a little soggy, and bland. I believe this is due to the wine, and tomato mixture we added towards the end. Which would make sense, since there was a lot of liquid added in that last step. Overall i would recommend this dish to anyone. well anyone, besides vegetarians, or recovering AA patients.

  1. We didn't brine this chicken. That was the one for fried chicken.
